A South American Love Affair
'Penelope's fascination with South America started at the beginning of the millennium. She spent many months traveling around the region; she scaled the dizzy height of Macchu Picchu, sandboarded in Ica, cycled down death road in Boliva, visited the salt flats of Uyuni, saw the condors circle less than a meter above her head in Peru, stood on the equator and took a bath in the hot springs at Banos.
She settled, for a time, in Bogota, Colombia, where she perfected the art of South American cuisine at an eco-resort in the heart of beautiful Tayrona, a nature reserve on the Caribbean coast.
Next, she moved to Argentina where she learned to make Italian style gnocchis, pizzas and the best barbecue.
After more than 10 years away from the UK, 'Penelope' decided to return to her roots. She settled on the South coast in Hastings.
Penelope's Pitstop was created to show the love for South American food she developed whilst living on the continent those 11 years. We fuse the best dishes from all over South America to create our menus, showcasing local ingredients such as Hastings fish. Many of our ingredients are home-grown in our garden and allotment.
We also make our own hot sauces, preserves and dulce de leche.
